Poached Eggs with Fresh Asparagus & Hollandaise

Serves: 1 or as required

Cooking time : 5 minutes

Hint: This serves as a complete meal for a special breakfast. It can be served with or without the ham.


  • 1 slice Italian bread, toasted
  • 1 thick slice cooked ham
  • 1 extra large egg, poached
  • 4 – 6 asparagus spears, lightly cooked
  • 50 ml Hollandaise


  • Stack the toast with a slice of ham, a poached egg and finish with hollandaise.
  • Serve with cooked asparagus.
