Breakfast Tortilla

Ingredients:

  • butter or margarine for cooking
  • 1 egg, beaten
  • Salt and pepper
  • 1 large tortilla wrap
  • ¼ avocado, mashed
  • 30 ml (2 tbsp) left-over bolognaise
  • 30 ml (2 tbsp) cheddar, grated

 

Method:

  1. Heat a knob of butter/margarine in a frying pan over medium-high heat and cook the egg, scraping the pan for about 3 minutes or until just cooked. Season with salt and pepper.
  2. Make a cut from the bottom edge of the tortilla to the center. Arrange the ingredients into 4 quarters on the tortilla (Bottom right: seasoned avo, Top Right: scrambled egg, Top Left: bolognaise, Bottom Left: cheddar).
  3. Fold the bottom right quarter with the avo up, over the eggs. Then fold this over the bolognaise and lastly over the cheddar to form a triangle.
  4. Heat a knob of butter/margarine in a frying pan over medium high heat and cook the tortilla for about 2-3 minutes each side, pressing down with a spatula, until golden brown and crispy.
