Steak and Atchar Eggs Gatsby

Serves 2

Preparation time: 10 minutes

Cooking time: 15 minutes

 

Ingredients:

  • 250 g sirloin steak
  • Olive oil, for cooking
  • 15 ml (1 tbsp) hot or mild curry powder
  • Saltand pepper  
  • 2 eggs
  • 125 ml (½ cup) atchar
  • 1 medium (about 40 cm) French loaf, cut open
  • 60 ml (¼ cup) mayonnaise
  • handful cos or iceberg lettuce, torn  
  • 500 ml (2 cups) ‘slap’ chips

 

Method: 

  1. Rub the steak with oil, followed by the curry powder. Season with salt and pepper.  
  2. Cook the steak over very hot coals for about 3-4 minutes on each side, for medium rare or until cooked to your liking. Set aside, covered with foil, for 3 minutes. Thinly slice and mix through any of the meat juices.  
  3. Meanwhile, heat a splash of oil in a cast iron frying pan over medium coals (alternatively on the stove). Break in the eggs and fry for about 3 minutes, or until whites are completely set with yolks still soft or cooked to your liking. Season with salt and pepper. Add the atchar to the side of the eggs and heat through.
  4. Spreadthe French loaf with the mayonnaise. Stuff with the lettuce, chips, steak, atchar and eggs.
