Easy Bacon and Egg Pie

Ingredients:
- 4 rashers streaky bacon
- 2 large wraps
- Melted margarine, for brushing
- 250 ml (1 cup) finely grated cheddar
- 5 eggs, beaten
- 375 ml (1½ cups) milk
- 5 ml (1 tsp) mustard powder
- Handful parsley, chopped + extra
- Salt and pepper
Method:
- Preheat oven to 180°C. Line a 20 cm springform cake tin with 2 large, overlapping pieces of baking paper.
- Place the bacon onto a baking paper lined tray. Bake for about 15 minutes or until starting to crisp.
- Brush the wraps with melted margarine. Sprinkle one wrap with 80 ml (⅓ cup) of the cheddar and sandwich together with the remaining wrap. Press into the prepared tin. Bake for about 5 minutes or until light golden.
- Combine the remaining cheddar, eggs, milk, mustard and parsley. Season with salt and pepper. Pour into the wrap case.
- Bake for 30 minutes. Top with the bacon and bake for another 20 minutes or until just set. Set aside for 10 minutes before serving. Scatter with extra parsley.
