Egg Open Sandwiches

Eggs make the most delicious open sandwiches. These sandwiches can be prepared with many different ingredients, but the procedure to make them is always the same. As for fillings and garnishes, these are only suggestions. There is no “right way” to combine fillings and garnishes.

Ingredients:

  • 2 eggs, hard boiled, shelled, sliced thinly
  • 2 eggs, hardboiled and mashed with a little mayo
  • 2 eggs, hardboiled and mashed with a little mayo and curry paste
  • 8 slices bread of your choice (white/whole-wheat/seeded/rye)
  • 3-4 tablespoons butter, room temperature
  • Soft lettuce leaves, such as butter lettuce, washed and patted dry
  • Handful rocket leaves, washed and dried

For the Toppings:

  • Pickled onion
  • Pickled gherkins
  • Radish slices
  • Beetroot, grated or slices
  • Crispy fried onion

Other optional toppings:

  • Carrot ribbons
  • Smoked paprika
  • Tomato slices
  • Cucumber slices
  • Japanese mayo
  • Mustard butter

Method:

  1. Butter a slice of bread and place a leaf of lettuce on the buttered bread. Top first with a hearty egg filling, and then garnish with your selection.

Tip:

Open sandwiches are a good way to use up leftovers. Chop leftover cold meat with a little mayo, and top with sliced egg and other toppings.
Garnishes can be prepared in advance and stored until you are ready to assemble the sandwiches. Use the above suggestions in any kind of combinations and, if you have leftover garnishes, they can go into a salad to serve alongside the sandwich
